- 1/3 cup melted butter
- 1 cup white sugar
- 3 tablespoons lemon juice
- 2 eggs
- 1 1/2 cups all-purpose flour

- 1 teaspoon salt

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
- In a mixing bowl, beat together butter, 1 cup sugar, juice and eggs. Combine flour, baking powder and salt; stir into egg mixture alternately with milk. Fold in lemon zest, nuts, and blueberries. Pour batter into prepared pan.
- Bake in preheated oven for 60 to 70 minutes, until a toothpick inserted into center of the loaf comes out clean. Cool bread in pan for 10 minutes. Meanwhile, combine lemon juice and 1/4 cup sugar in a small bowl. Remove bread from pan and drizzle with glaze. Cool on a wire rack.

Honey Grain Bread (For Bread Machine)
- 1 cup water
- 2 tablespoons butter or margarine
- 1 and 1/2 tablespoons honey
- 1 teaspoon salt
- 2 and 1/4 cups bread flour
- 1 cup whole wheat flour
- 1/2 cup quick cook oats
- 2 teaspoons active dry yeast
- Measure and add liquid ingredients to the bread pan.
- Measure and add dry ingredients (except yeast) to the bread pan.
- Use your finger to form a well (hole) in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure the yeast and carefully pour it into the well.
- Snap the baking pan into the breadmaker and close the lid.
- Press "Select" button to choose the Whole Wheat setting.
- Press the "Crust Color" button to choose light, medium or dark crust.
- Press the "Start/Stop" button.
Strawberry Banana Streusel Bread
This banana bread recipe came from my cousin. I just happened to have some strawberries and from my previous muffin recipe I really enjoyed the streusel on top so I decided to include it. This was my first attempt at any type of banana bread and we were happy with it.

- Blend sugar with fruit. Add the rest and mix. After mixed fold in cut up strawberries. Place in greased loaf pan. Sprinkle streusel topping evenly. Bake 45-60 minutes at 350 (or 325 for glass pans).
- Streusel topping: 1/4 cups Brown Sugar
1/8 cups Flour
1/2 tsp. Cinnamon
1 tbsp. Melted Butter Or Margarine - (In a medium bowl, brown sugar, flour, cinnamon, and melted butter or margarine. Stir this mixture until crumbly).
Honey Whole Wheat Bread (For Bread Machine)
- 1 (.25 ounce) package active dry yeast
- 1/3 c honey
- 2c all purpose flour
- 2 TBS butter, melted
- 1/2 TBS salt
- 2 1/4 c whole wheat flour
- 1/4 c ground flax seed
Add to bread machine
Add remaining ingredients.
Use "dough" setting.
Take out of bread machine and let rise once more.
Brush with olive oil and sprinkle with oats.
Bake at 375° for 40 minutes.

Authentic French Bread (For Bread Machine)
- 1 cup warm water (110 degrees F.)
- 1 1/2 teaspoons salt
- 3 cups bread flour
- 3 teaspoons Instant Active Dry Yeast
- Cornmeal (optional for dusting pan)
Add all the ingredients except cornmeal in the bread pan of bread machine. Process according to manufacturer's instructions for a dough setting. NOTE: Don't be afraid to open the lid and check the dough. It should form a nice elastic ball. When the bread machine has completed the dough cycle, remove the dough from the pan to a lightly floured surface. Knead the dough several times and form the dough into an oval; cover with plastic wrap and let rest for 10 to 15 minutes.
NOTE: Check the dough (don't be afraid to open the lid). It should form a nice elastic ball. If you think the dough is too moist, add additional flour (a tablespoon at a time). The same is true if the dough is looking dry and gnarly. Add warm water (a tablespoon at a time). If you can't judge your dough by looking, stick your finger in and feel the dough. It should be slightly tacky to the touch.
Shape dough into a loaf shape and place on a cookie sheet that is dusted with cornmeal or use the Silicone Baking Mats. I personally recommend that you use the Silicone Baking Mats as nothing sticks to them. Cover with plastic wrap and place in a warm spot to rise until doubled in size, approximately 1 to 3 hours.
Preheat oven to 400 degrees F. After rising, slash the bread with a bread razor or a very sharp knife making three 1/2-inch deep diagonal slashes. Brush or spray the top of the bread with cold water and bake for 20 to 25 minutes or until nicely browned. A good check is to use an instant digital thermometer to test your bread. The temperature should be between 200 and 210 degrees.

- 3 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1 teaspoon nutmeg
- 3 eggs
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 2 – 1/4 cups white sugar
- 3 teaspoons vanilla extract
- 2 cups grated or shredded zucchini
- 1 cup chopped walnuts(Jesse hates nuts so this was a no go)
- Grease and flour two 8 x 4 inch pans or 5 mini loaf pans. Preheat oven to 350 degrees F. Mix flour, salt, baking powder, soda, cinnamon and nutmeg in medium bowl.
- Beat eggs, oil, applesauce, vanilla, and sugar together in a large bowl. Add dry ingredients to the creamed mixture and beat well. (Batter will be very thick.)
- Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
- Bake for 40 to 60 minutes or until tester inserted in the center comes out clean. Cool in pan on wire rack for 20 minutes. Remove bread from pan. Cool completely.
Banana Peach Bread
This banana bread recipe comes from my aunt and I swear it must be the easiest thing to make.
- 3 bananas
- 1 cup sugar
- dash of salt
- 2 eggs
- 1/2 cup vegetable oil (or applesauce)
- 1 tsp baking soda
- 1 tbsp water
- 2 cups flour
- nuts (optional)
- I added two peaches (blanched, peeled and chopped up) Mine were very large so maybe one would be better. Just make sure all your fruit is ripe!
- Blend sugar with fruit. Add the rest and mix. Place in greased loaf pan. Bake 45-60 minutes at 350 (or 325 for glass pans).
White Bread (For Bread Machines)

- 1/2 cup vegetable oil

Combine the flour, salt, baking soda, baking powder, cinnamon, nutmeg, cloves and ginger; stir into the pumpkin mixture until well combined, add walnuts and mix. Pour the batter into the greased loaf pan. Bake in the oven for 55-65 minutes or until a tester comes out clean when inserted into the center of the loaf. Enjoy.

- 1 tbsp granulated sugar
- 1 tbsp shortening
- 3 2/3 cups bread flour
- 1 1/4 tsp bread machine yeast
1. Measure ingredients into the baking pan ( the manufacturer may recommend the order ). Insert the pan into the oven chamber and select the Dough Cycle.
2. Remove and place the dough on a lightly floured surface. Cover it with a large bowel and let it rest for 10 to 15 minutes.
3. Divide the dough in half ( if the dough is sticky at this stage, flour your hands and add a small amount of flour to the board; too much flour, however, can result in a tough, heavy texture ). Form each half into a loaf measuring 10 by 4 by 2 inches. Flatten the top slightly.
4.Place the formed loaves onto a baking sheet dusted with cornmeal. Cover and let rise in a warm and draft-free place for 30 to 45 minutes, or until they double in volume. Bake at 400 degrees F ( 200 degrees C ) for 20 to 25 minutes, or until the loaves sound hollow when tapped on the bottom.
This bread was very good! I was pleased! I served this with Cipollini onion pot roast.

- 1/2 tablespoon chopped fresh thyme leaves
- 1 stick (1/2 cup) butter, cut into 1/2-inch pieces, at room temperature
- 1 clove minced garlic
- 3/4 cup water, plus extra, as needed
- Combine the flour, baking soda, salt, rosemary, and thyme in the bowl of an upright mixer, fitted with a paddle attachment. Add the butter and mix on low speed until incorporated, about 2 minutes, add minced garlic. With the machine running, slowly add the water until the mixture forms a dough, adding more water, if needed, 1 tablespoon at a time. Transfer the dough to a lightly floured work surface and knead for 5 minutes until smooth. Cut the dough into 4 equal pieces. Form into disc shapes and wrap in plastic wrap. Refrigerate for 30 minutes.
- I used this recipe as a pizza dough so here are my directions for that: Roll out dough into 6 to 8 inch circles. Add marinara sauce and favorite pizza toppings. Pizza directions to follow post.
Blueberry Bread
This recipe is a combination of two recipes, I wanted to make this so I could specifically make it into french toast. Why? Because it sounded good :) This is recipe # 1 - http://www.food.com/recipe/blueberry-bread-195154 and this is recipe # 2 - http://wherewomencook.com/scrumptious-blueberry-bread-with-kathy-petersen/ I am sure either one of these recipes would be wonderful but this is kind of what I came up with keeping in mind that I wanted mine a little less moist for french toast:
- 3 ½ cups flour
- 1 teaspoon cinnamon
- 1 ½ cups, plus 1-tablespoon water
- 1/4 cup melted butter
- 2 tablespoons sugar
- 1-teaspoon salt
- ½ cup oats
- 1 packet yeast (2-1/4 teaspoons)
- Blueberries – 1 ½ cups
1. Put all
ingredients into bread machine, except blueberries.
2. Let rise for 30 minutes or until
it is about doubled in size and then just turn oven to 350 without taking bread
out of the oven. (There was enough dough that I put it into two different bread pans).
3. Bake at 350 for
30 minutes.
