Grilled Pepperoni & Mozzarella On Sourdough Bread

Let me preface by saying this is my late night concoction. Made with leftover pizza ingredients.
  • Two pieces Sourdough bread (or whatever you prefer, I like my grilled cheese sandwiches on thicker bread).
  • 2 tablespoons of butter (made spreadable and depending on the size of your bread you may want more butter).
  • Mozzarella cheese cut thin (so it melts quickly) and make sure you have enough to cover your bread.
  • 6 pepperoni (more if you prefer it).
  1. Turn your stove on low heat, put your pan on it, butter your bread, slice your cheese.
  2. Put your first piece of bread butter side down on the heating pan.
  3. Add your cheese. Let the cheese melt (this may take some patience, but as you see it melt you can start to increase the temperature, I would not go over medium high heat, I stayed at medium low).
  4. After your cheese is fairly melted, add the pepperoni on top and push into the melted cheese (it will be greasy if you don't pat the pepperoni down beforehand), then add the top piece of bread butter side up.
  5. As it cooks and melts together a little bit keep flipping on both sides until golden brown.
  6. Let cool (so it doesn't burn your mouth).
  7. And Enjoy!
If you are patient it can turn out great, if you are willing to try it I think it's worth it, not bad for leftovers!
Homemade Sloppy Joes

This is one of those well I have this stuff in my fridge or freezer so I might as well use it. Hopefully you will enjoy it as much as we did!
  • 1-2 tablespoons olive oil
  • 1 small onion (minced)
  • 2 cloves of garlic (minced)
  • 1/2 pound to 1 pound of ground beef (estimating)
  • 1/4 cup bread crumbs
  • 1/2 cup Sweet Baby Ray's-Honey Chipotle BBQ sauce
  • Hoagies or hamburger buns
  • Pepper jack cheese (optional)
  1. I started by heating the olive oil in a saucepan. I minced the onion and garlic and sauteed them for a couple of minutes until the onions were translucent.
  2. Next, brown the ground beef in the onions and garlic. Drain the excess fat.
  3. Add the bread crumbs and BBQ sauce. Combine until it has the consistency of a sloppy joe.
  4. Put your meat in your bun and top with cheese!
All in all a pretty good meal, it was quick and easy!
