Fish

White Fish
  • White fish filets (I used swai and I did 3 filets)
  • 1 lemon
  • Salt
  • Lemon Pepper
  • Olive oil
  • Lindberg-Snider seasoning
  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Tear one 12-by-18-inch piece of heavy-duty aluminum foil for each packet. Spray each piece of foil lightly with nonstick cooking spray.
  3. Rinse and pat dry the white fish fillets.
  4. Place one fillet in the center of each piece of foil.
  5. Season the white fish fillets with salt and pepper. Add your favorite seasonings or toppings. Pour on 1 tablespoon of lemon juice and a light drizzle of olive oil to finish seasoning your white fish (season to taste, I just sprinkled a little bit of everything on my filets). Top with vegetables if desired.
  6. Bring up two sides of the foil and double fold together. Repeat for the ends. Place the foil packets on a baking sheet.
  7. Bake the fish fillets for 20 to 25 minutes in the preheated oven, or until the fish is cooked through. Remove the packets from the oven and open one end to allow steam to escape before you serve your white fish in foil.

    This recipe produces very moist fish and we both really enjoyed it. I served this over brown rice and the juice from the fish kicked the rice up a bit and added more flavor.
