Soft Pretzels (For Bread Machines)
- 1 (1/4 ounce) package dry active yeast
- 1 tablespoon sugar
- 3 cups flour
- 1 cup water
- 1/2 teaspoon salt
- 2 tablespoons oil
- 1 egg white, slightly beaten
- coarse salt
- butter
- Place ingredients in bread machine pan in the order suggested by the manufacturer.
- Select White Bread setting, Manual and then press Start.
- After the machine has completed the second rising cycle, it will beep.
- Remove the dough onto a very lightly floured surface.
- Divide into 4 parts.
- Divide each fourth into 3 pieces.
- Roll each piece into an 18 inch rope.
- Shape rope into a circle, overlapping about 4 inches; from each end, leaving ends free.
- Take one end in each hand and twist at the point where dough overlaps.
- Carefully lift ends across to the opposite edge of circle.
- Tuck ends under edge to make a pretzel shape; moisten and press ends to seal.
- Place on greased cookie sheet.
- Let rise, uncovered, until puffy, about 20 minutes.
- In a 3-quart saucepan, combine 2 quarts of water and 1/3 cup baking soda; bring to a boil.
- Lower 1 or 2 pretzels into the saucepan; simmer for 10 seconds on each side.
- Lift from water with a slotted spoon.
- Return to greased cookie sheet.
- Let dry briefly.
- Brush with 1 egg white slightly beaten.
- Sprinkle with course salt or sesame seeds or leave plain.
- If you leave them plain, after they bake dip into melted butter then in cinnamon and sugar mixture.
- Bake at 425°F for 4 minutes; then turn cookie sheet around and bake 4 more minutes.

Homemade Tortilla Chips
- 5 small corn tortillas
- 2 tablespoons vegetable oil (this is approximate, you need enough to cover the bottom of the pan)
- salt for topping
- salsa (optional for enjoying with it)
- Put some vegetable oil in a pan and turn it to medium heat (let your pan heat before putting in tortillas).
- Cut tortillas into strips or chip-like shapes, whatever your preference is.
- Put some paper towels on a plate and put your cut chips in your pan.
- As the chips are cooking flip them over; check each side as they will eventually become golden brown. They also start to curl up when they are close to being done or need to be flipped.
- As you flip them over you will start to notice the difference in their rigidity.
- After they are cooked put them on your plate so the excess oil may drain out.
- Add salt while still hot. Let them cool and enjoy!
Baked Potato Chips
I had a craving and looked up this recipe. They are SO good! Give 'em a try!
- 2 medium russet potatoes, scrubbed and sliced 1/8 inch thick (I used 4 yukon gold potatoes)
- 1-2 tablespoons extra-virgin olive oil
- 1/2 teaspoon coarse salt, preferably sea salt (I used regular salt)
Preheat oven to 400 degrees, with racks in center and lower positions. Slice potatoes and put them in a bowl of water. Soak for 10 minutes and pat potatoes dry. Divide potatoes between 2 rimmed baking sheets. Drizzle with oil, toss, and spread them in a single layer on sheets (I would hate to destroy my cookie sheets so I put foil on mine and it worked fine for me). Bake, flipping once, until centers are soft and edges are crisp, 22 to 25 minutes. Sprinkle liberally with salt.
If you want to use sweet potatoes, follow this recipe but there's no need to soak them in water!

Caramelized Apples
I was watching the food network show last night called CHOPPED. I saw a girl caramelize some apples and decided I wanted to try it.
- 1 apple
- 2 tablespoons butter
- 2 tablespoons sugar
- 1/8-1/4 teaspoon cinnamon (if you want an intense flavor add more but you have to find a balance of flavor)
- Slice apple into thin pieces
- Heat the stove to medium low heat.
- In a pan melt the butter and add the sugar and cinnamon.
- Add the apples and coat them with the cinnamon/sugar in the pan.
- Heat until tender (This should take a couple of minutes).
- Serve up and enjoy!
Homemade Whole Wheat Tortillas

- 2 cups whole wheat flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 T olive oil
- 1/2 cup warm tap water
- Combine flour, Baking powder and salt. Add olive oil and stir until well combined. Put in warm tap water 1 T at a time until dough can be gathered into a ball. Add more water if needed 1 T at a time. Knead on floured surface 15-20 times. Let dough rest for 15 minutes. Divide dough into 10-12 equal portions and shape into balls. On floured surface roll out ball from center into a circle. Cook on ungreased skillet over medium-high heat on each side about 30 seconds or until puffy. You can cook them longer until they are crisp like a big chip. Wrap them in a towel to stay warm. Great with Refried Beans and Spanish Rice.
Baked Corn Tortilla Chips

- Corn Tortillas
- Oil-based cooking spray
- Seasoning (salt, herbs, cheese, etc—be creative!)
- Preheat oven to 350 degrees F (180 degrees C).
- Using a pizza cutter (or sharp knife), cut each corn tortilla into 8 equal pie slices.
- Arrange on baking sheet and lightly spray with cooking spray.
- Sprinkle with seasonings and bake for approximately 15 minutes, or until chips are crisp to the touch.
