Creamsicle Cookies
  • 2 1/2 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 1/2 cup sugar
  • 1/2 (cup) firmly packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons orange zest (for me that was the zest of 2 oranges)
  • 2 cups Guitard Choc-Au-Lait Vanilla Chips (I used Ghirardelli white chips)

  1. Preheat oven to 375 degrees.
  2. In a small bowl, combine flour, baking soda, and salt; set aside.
  3. In a large bowl, cream butter and sugars until light and creamy. Beat in egg and vanilla until smooth. Gradually add flour mixture until combined. Stir in orange zest and chips.
  4. Drop rounded teaspoonfuls onto ungreased cookie sheets. Do not flatten cookies; it will make them dry. Bake 8 - 10 minutes or until golden brown around edges. Do not overcook! Cookies will be plump. Cool for several minutes on cookie sheets before transferring to rack to cool completely. Store in airtight container. VERY GOOD!

Peanut Butter Cookies

  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 1/2 cup chunky peanut butter*
  • 1 cup light brown sugar
  • 1 large egg
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
2. In the bowl of an electric mixer, cream together the butter, peanut butter, and sugar until light and fluffy. Beat in the egg. Add flour, baking powder, and salt and beat at low speed until just combined.
3. Drop by the tablespoon onto the baking sheet, then flatten with a fork, making a crosshatch pattern. Bake in batches until slightly puffed, 12 to 15 minutes. Cool cookies on a wire rack.

 

White Chocolate Macadamia Nut Cookies

-2 cups all-purpose flour
-1/2 tsp baking soda
-1/2 tsp salt
-3/4 cup butter, melted
-1 cup packed brown sugar
-1/2 cup granulated sugar
-1 egg
-1 egg yolk
-1 tbsp vanilla extract
-1 cup coarsely chopped macadamia nuts
-1 1/2 cups white chocolate chips

1. Preheat the oven to 325F. Mix flour, baking soda, and salt in a bowl and set aside for later.
2. In the bowl with a mixer, beat melted butter with sugars. Beat in the egg, followed by the egg yolk, followed by the vanilla.
3. Slowly add the flour mixture until just combined. Stir in the nuts and white chocolate chips by hand.
4. On greased or parchment lined baking sheets, drop spoonfuls of dough about 2 inches apart (I used a cookie scoop).
5. Bake for 12-15 minutes until edges are golden brown. Cookies will be soft upon removal but will firm up a bit as they cool on the baking sheet. Transfer to wire rack to cool completely.
*I got 4 dozen 2-inch cookies


Iced Orange Cookies

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup orange juice
  • 1 tablespoon grated orange peel
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • ICING:
  • 2 cups confectioners' sugar
  • 1/4 cup orange juice
  • 2 tablespoons butter (no substitutes), melted
  1. In a mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Beat in orange juice and peel. Combine flour, baking powder and salt; gradually add to the creamed mixture.
  2. Drop by heaping teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350 degrees F for 10-12 minutes or until edges begin to brown. Remove to wire racks to cool.
  3. In a small bowl, combine icing ingredients until smooth; drizzle over cooled cookies.
My glaze came out with the consistency of a glaze and a frosting, so I took a knife and spread it on like frosting. These are yummy!
